I've been making an effort to cook at home more lately and I thought I'd share some of the yummy recipes I've been discovering. This one comes from Fresh Food Fast Weekend Night Meals from Cooking Light. All of the recipes in it are super yummy and super easy (around 5 ingredients or 15 minutes prep time) which is perfect for our busy life.
This recipe originally called for catfish but I couldn't find it fresh the first time I wanted to make it so I substituted tilapia (which is one of my fav fish) and it tastes great! The following makes enough for four people.
Blackened Tilapia
Ingredients
2 tablespoons paprika
1 tablespoon dried oregano
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground red pepper
4 (6-ounce) tilapia fillets
2 teaspoons olive oil
Preparation
Combine first 5 ingredients in a small bowl. Sprinkle both sides of fish with the paprika mixture.
Heat oil in a large cast-iron skillet over high heat. Add fish; cook 4 minutes on each side or until fish flakes easily with a fork.
Sauteed Corn and Cherry Tomatoes
Ingredients
2 teaspoons of olive oil
1 garlic clove, minced
2 cups of fresh corn kernels (about 3 ears)
1 cup cherry tomatoes (about 10)
3 tablespoons of chopped green onions (about 2 large)
1 tablespoon of red wine vinegar (originally called for sherry vinegar but I had red wine vinegar in the house and it tastes great)
2 teaspoons of minced fresh thyme
Preparation
Heat oil over medium heat. Add garlic and saute 1 minute before adding corn and tomatoes. Cook for 3 more minutes (or until tender), stirring frequently. Remove from heat and add everything else.
The veggies taste great heaped on top of the fish. It helps keep down the time it takes my cooking the fish and veggies at the same time in different pans.
I love taking a recipe I find and then adjusting it to suit my tastes (or what's in my cupboard). Most of the time it turns out great! What are your favourite weeknight recipes?
